The hidden secrets of wine tasting as I learned in Romania

First of all, don't swallow the wine, or you'll get drunk within minutes. There must be a spittingtool available at your tasting, if it is an exquisite one. If you are simply visiting a vineyard ask permission to spit on the floor, or in a special vessel. The host will not be hurt, I can bet  on it. He will grant permission, or bring a special vessel! Even under these circumstances after more than five samples you will feel a starting carousal, but there is nothing you can do about it: it is due to tongue absorption.

Second, don't look the label. There are strange phenomena of suggestion while tasting; e.g. for the absolutely same wine drunk from glasses with different labels even the most experienced someliers and professional tasters will find complete different qualities! Use the sight during the tasting only to judge the color and the film; besides, hold your eyed closed!

In relation to the above paragraph is useful to take part sometimes to blind tasting in order to enhance your smell and taste. On these occasions, all the wines come in black glasses.

Try to avoid mixing the red with the white wines. If not possible, at least taste first the white wines, and afterwards the red ones (keep in mind, is necessary to keep this order, as the red wines are richer and stronger!)

Eat something after every two sample (a small slice of bread with cheese; or a slice of apple are the most usual dishes ). Rinse your mouth and brush your tongue after every five samples, or when you simply observe that your taste doesn't keep anymore. You could think I am mad, how could I dare to recommend Romania on an established market with such big names like France, Spain. Italy, to name only the peaks of the icebergs. Romania remains a wine land, as it has a long tradition in this field. 2500 years ago, the Dacs, Romanian ancestors were ruled by Burebista and very eager about wine and vineyards. Due to the defending campaigns against the Romans, Burebista ordered the complete destruction of the vineyards, because the troops didn't obey anymore. The result was not a revigorating spirit in the army, as expected, but on the contrary!

Nowadays Romania has large surfaces with vineyards, which leads in certain regions to monoculture! The owner of the vineyards are very meridional, when it turns to their wine. Even on this aspect the situation is very similar with Italy and France! Many of the Romanians drink wine and enjoy it. What shall be your poison in the morning


30 years ago, the French, who are the model for every wine lover with their savoir faire, used to drink 2 glasses of wine already in the morning. This fact lead to increasing mortality through liver diseases. As a reaction, the French government started a campaign for sobriety. And this unpopular campaign against the misuse of alcohol (specially wine, this our soft spot) showed its results in a few years!

What I am trying to tell you is that I love you all as wine lovers or afficionados, and I need that you stay healthy, in the best shape I mean.

Therefore, I propose you to avoid wine at breakfast, as you are not addicted. Drink a tea, which should be not very hot, and eat some cheese with toasts and butter. After 11 you can start with tasting! Please remain sober and healthy.

what to do with a red wine?

I personally find red wines a little bit more recommanable than the white ones. Really feel the reds more genuine, harder, but nevertheless tenderer. Drink red wine with a sour goat cheese, with a red meat, with spaghetti. Drink it two glasses at the second dish, and you will enjoy better the wine, as also the dish itself! Don't swallow at once, let the wine go throughout all your mouth, and specially through all the region of your tongue, in order to feel all the hidden taste. I would underline the exceptional importance of the tongue as the carrier of the tasting papillae. Train your taste, and you will be amazed how fine can it become, and try to maintain your tongue in a good shape through avoiding too hot or too cold, or too spicy dishes. Don't smoke, unless you will be not able to feel the richness and the bouquet of the wine.
Don't neglect to smell the wine, and don't forget to watch it carefully observing its surface and the forming pelicula (which must be continuos)
I usually drink medium dry, and I suggest fr the men to do the same; on the contrary, the ladies could prefer the sweet ones!

I took part at many wine tastings in Romania, as a travel guide, and was always deeply impressed, because the guests were really enthusiastic. I am also mainly a wine drinker (not addicted yet) and I have a small vineyard. Big names of Romanian Wine Tasting are not unknown to me.
